Happy Birthday Leha: White Choc Macadamia Cake & Kek Coklat Sesuka Hati

It's my husband's cousin's birthday, Leha and I managed to bake her the birthday cakes plus deco in less than 2 hours.. it was a miscommunication.. we thought the party would be held in Friday but actually it was one day before, thursday... anyways all well is well so once again Happy Birthday, Leha!









As for the white choc macadamia cake recipe I took the recipe from Kak Azlita Masam Manis' blog so please give credit to her ;)

KEK SPAN BADAM
4 biji telur gred A180 gm gula halus170 gm tepung2 sudu besar serbuk almond 70 gm air1 sudu teh baking powder15 gm ovellete50 gm minyak jagung1 sudu teh esen vanilla
Ayak tepung dan baking powderSatukan semua bahan ke dalam bekas pemukul kecuali minyak jagungPukul dengan kelajuan tinggi hingga adunan menjadi putih, lembut dan gebuTambahkan minyak dan kaup balik perlahan hingga bergaul sempurnaTuangkan dalam loyang 8 inc yang telah di lapik kertas kek dan di oles butterBakar dalam ketuhar pada suhu 170 C selama 30 ~ 45 minit bergantung kepanas ovenTerbalikkan atas redai setelah masakLepas 5 minit terbalikkan semula dan keluarkan dari loyangBiarkan kek sejuk sepenuhnya dan potong kek kepada 3 atau 4 kepingan
Kemudian kita sediakan salted karamel. Resepi ni dapat banyak, boleh buat 1/2 adunan sahaja kerana kita hanya perlukan 2 sudu besar sahaja.
SALTED CARAMEL
113 gm butter tanpa garam120 ml heavy cream atau Dairy whipping cream3 sudu besar air60 ml corn syrup200 gm gula
Potong buter kepada kiub kecilCampurkan bersama krim dan panaskan dalam microwave hingga ia cair tapi masih keruh ~ ketepikanBoleh juga panaskan atas api perlahanDalam periuk satukan air, gula dan corn syrupMasak atas dapur hingga ia mendidih, berbuih-buih dan gula melarut ~ anggaran suhu 150C kalau tak ada temormeter cuma pastikan gula dah larut dan ia benar-benar mendidihTutup periuk supaya gula yang melekat di tepi periuk mencair dan turun ke bawahBuka periuk dan tuangkan krim dan butter cair tadiKacau perlahan dan masak hingga pekatBiarkan sejuk
Sekarang kita sediakan cream
SALTED CARAMEL CREAM
3 biji kuning telur100 gm coklat masakan putih8 gm gelatin30 gm air2 sudu besar salted caramel250 gm Krim Bukan tenusu1 sudu teh esen vanilla
Satukan gelatin dalam air dan biarkan kembangCairkan gelatin dengan kaedah double boilerCairkan coklat masakan dengan kaedah double boilerDengan kaedah double boiler juga panaskan kuning telur sambil sentiasa di kacau hingga ia berkrimTuangkan gelatin dan gaul rataTuangkan coklat masakan dan salted caramel gaul rataBiarkan sejukDalam bekas lain putar krim putar dan esen vanilla hingga kentalKaup balik krim dalam caramel hingga berkrim


CARAMEL MACADAMIA

100 gm kacang macadamia
2 sudu besar gula
1 1/2 sudu besar air

masak gula hingga perang
Tambahkan air dan biar ia pekat
tambahkan kacang dan gaul rata hingga gula bersalut pada kacang
Sejukkan dan potong atau cincang kacang kasar 

GANACHE COKLAT PUTIH

125 ml krim tenusu
20 gm sirap glucos
200 gm coklat masakan putih
15 gm mentega

Cincang coklat halus
Masak krim dan sirap glucos hingga berbuih
Tuangkan krim atas coklat dan biarkan coklat mencair
Tambahkan butter
Gaul rata 

KAEDAH PENYEDIAAN

Letakkan sekeping kek atas lapik kek
Letakkan salted caramel krim
Taburkan caramel Macadamia
Ulang proses hingga habis
Salutkan keseluruhan kek dengan krim dan simpan dalam peti ais hingga krim mengeras, sebaiknya semalaman
Letakkan kek atas redai dan tuangkan coklat ganache
Hiaslah kek mengikut kreativiti

I enjoyed myself although I think its quite tiresome n challenging for someone amateur like me but then I will never give up n will keep on trying. so for now enjoy the pictures, folks!

Blueberry Cheese Cake & Royal Caramel

The blueberry cheese cake is for Yasmin's family and the Royal Caramel cake is an attempt made since I didn't try making it at all after coming back from class..

As seen in the picture, the cake tester a.k.a mr hubby enjoying his royal caramel cake slice ;)

I will find time to rebake the cake and redecorate the cake and weight it so that I can finalise the price and made it available for orders in the near future

Moist Chocolate Cake Week

after soooooooooo long not updating my blog, I'm back! I'm finally back on track again with myself n my hobby; baking! I'm so glad that I still received endless support from close friends and husband to continue what I used to love doing.. Looking forward to the school holidays as I promise my husband that I will resharpen my skills throughout the school holidays.. So for now, let's just enjoy the scrumptious moist chocolate cake that I've made so far..

Snowy Peach Custard Cream Cake + Puff Classes

Ya Allah punyalah x sedar x update blog pasal kelas dgn Kak Zu yg dah berkurun lama.. I attended the personal class with her despite that I was not feeling quite well as it was not easy for me to fit into her busy schedule.. Basically everyone loved the cake as it was not too sweet, rich with the peaches and all. And the custard puff; out of this world as the custard cream is being mixed with whipping cream, so there you go, melted in your mouth. In fact on the same day, I used the left over custard cream to decorate a wedding cake for my hubby's staff as the other person who was supposed to bake the cake couldn't do it at the very last minute. Luckily the theme was yellow gold. What an experience plus with me getting feverish. Thanks a lot Kak Zu for providing me with the custard creams!

German Black Forest

I made this cake for my mother in law's birthday last September. Mendapat pujian, alhamdulillah.. It's quite a challenge for me to find the right cake for her because she dislike sweet buttercream. Luckily the topping for this cake is made from fresh cream plus cocoa powder. Moreover, the pitted dark cherries plus the chocolate chiffon cake made a great combination. Once again, Happy Belated Birthday Mak!
