Carrot Cake

We had a pot luck at school somewhere last week. At first, I didn't know what to do.. Nak masak2 ni cm lambat skit ;b suddenly TING! Carrot Cake! Alhamdulillah the carrot cake licin in 20 minutes time. Thanks to d carrot cake, it somehow has given me d courage to be friendlier to other teachers in that school since I considered myself quite new there ( transferred in Jan 2012 ).

Why carrot cake? Because it has a unique taste, a combination of carrots and walnut and cream cheese topping ;) Yummy! And again, thanks to d video that Raihanna uploaded in her blog, I now know how to make d carrot icing ( although I have a looong way to go to make a perfect carrot shape ) So happy

CARROT CAKE RECIPE

2 cups flour
1 tsp baking powder
1 tsp baking soda
A pinch of salt
1 cup corn oil
2 1/2 carrots- grated
1 cup walnut- chopped
1 1/2 cups sugar
Vanilla essence
4 eggs

* Beat eggs & sugar. Add in corn oil. Beat the ingredients using a low speed. Add in flour, baking powder, soda, & salt. Mixed well. Using a spatula, put in the grated carrot & walnut. Pour into pan. Bake 180 C 30 mins.

CREAM CHEESE TOPPING
250g cream cheese
1/4 cup butter
1 1/2 cups icing sugar
Lemon zest

* Beat the butter. Add the cream cheese. Beat until smooth. Pour in the icing sugar. Beat using medium speed. Put in the lemon zest. Decorate your cake using this icing
